Zucchini Bread
I know! I know! Zucchini Bread? Yes, I said it. Zucchini Bread is really yummy and moist and does not require a lifetime in the kitchen. If you like the taste of Morning Glory Muffins or Spice Cake, you will love this Zucchini Bread Recipe.
Ingredients:
2- Eggs
1 1/2 c- Unpeeled, Grated Zucchini
2 t- Vanilla Extract
1 c- Granulated Sugar
1/4 c- Brown Sugar
1/2 t- Salt
1/2 t- Baking Soda
1/4 t- Baking Powder
1/2 c- Canola Oil
2 t- Cinnamon
Instructions:
Preheat oven to 350 degrees Fahrenheit. Grease muffing tins or2 loaf pans & sprinkle w/ flour.
Discard excess flour.
Sift dry ingredients together, if you do not have a sifter, give the mixture a quick mix.
Grate Zucchini on medium grate and set aside.
Using a rubber spatula, mix wet ingredients then fold in zucchini.
In a separate bowl, beat the eggs and sugar until they turn pale yellow.
Option: Mix 1/4 cup of powdered sugar w/ 1 tablespoon of milk to create a glaze.
