Zucchini Bread

I know! I know! Zucchini Bread? Yes, I said it. Zucchini Bread is really yummy and moist and does not require a lifetime in the kitchen. If you like the taste of Morning Glory Muffins or Spice Cake, you will love this Zucchini Bread Recipe.

Ingredients:

  • 2- Eggs

  • 1 1/2 c- Unpeeled, Grated Zucchini

  • 2 t- Vanilla Extract

  • 1 c- Granulated Sugar

  • 1/4 c- Brown Sugar

  • 1/2 t- Salt

  • 1/2 t- Baking Soda

  • 1/4 t- Baking Powder

  • 1/2 c- Canola Oil

  • 2 t- Cinnamon

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit. Grease muffing tins or2 loaf pans & sprinkle w/ flour.

  2. Discard excess flour.

  3. Sift dry ingredients together, if you do not have a sifter, give the mixture a quick mix.

  4. Grate Zucchini on medium grate and set aside.

  5. Using a rubber spatula, mix wet ingredients then fold in zucchini.

  6. In a separate bowl, beat the eggs and sugar until they turn pale yellow.

  7. Option: Mix 1/4 cup of powdered sugar w/ 1 tablespoon of milk to create a glaze.
